Sweet treats high in protein, fibre and calcium

Ingredients
  • 2 cup dried dates (chopped)
  • 1 cup raw almonds
  • 1 Tablespoon cocoa (heaped (add more to your tastes))
  • 1 cup desiccated coconut (Extra coconut for rolling the balls in at the end)
  • 1/4 cup sunflower seeds
  • 1/4 tsp salt
  • 1 tablespoon coconut oil
  • 1 teaspoon vanilla (optional. You can use one drop of pure peppermint oil instead)
  • 3 tablespoons water (you may need to add more or less)
Instructions
  1. Place the dates, nuts, coconut, sunflower seeds and coconut oil into a high powered blender

  2. Pulse the ingredients until they are roughly chopped

  3. Blend

  4. The ingredients will begin to stick to the sides. Scrape and add vanilla and water

  5. Blend again

  6. Once finely blended pinch between the fingers to see if it sticks together. If it doesn't you will need to blend a little more and add another tablespoon of water

  7. Tip out into a bowl and roll out into small balls about 2.5cm in diameter

  8. Place some coconut in a container and roll the balls individually in the coconut.

  9. Close-up of chocolate coconut balls on crinkled parchment, highlighting texture.

Store in the fridge for up to one week. These freeze really well
