Description

High fibre, gluten free muffins, no added sugar. Naturally sweetened with dates, coconut and milk - a delicious and gut loving lunch box snack!

High Fibre Gluten Free Muffins
  • 1 cup dates
  • 1 cup coconut
  • 1/4 cup sunflower seeds
  • 2 cups milk
  • 2 eggs (beaten)
  • 1/4 cup olive oil
  • 1.5 cups Gluten Free Flour
  • pinch salt
  • 1 tsp vanilla (optional)
  • 1 tsp ground ginger
  • 1/2 tsp cinnamon
METHOD
    STEP 1
  1. Pre heat oven. Place milk, dates, coconut, sunflower seeds and vanilla in a saucepan and bring to the boil on medium heat - mash dates. Remove from heat when the mixture thickens and set aside to cool

  2. STEP 2
  3. Beat the eggs

  4. STEP 3
  5. Add the eggs, oil, flour and salt into the thickened mixture and blend well, but don't over mix!

  6. STEP 4
  7. Place mixture into muffins holders and bake in a preheated oven for 20 minutes.
