High fibre, gluten free muffins, no added sugar. Naturally sweetened with dates, coconut and milk - a delicious and gut loving lunch box snack!

METHOD

STEP 1

  1. Pre heat oven. Place milk, dates, coconut, sunflower seeds and vanilla in a saucepan and bring to the boil on medium heat - mash dates. Remove from heat when the mixture thickens and set aside to cool

STEP 2

  1. Beat the eggs

STEP 3

  1. Add the eggs, oil, flour and salt into the thickened mixture and blend well, but don't over mix!

STEP 4

  1. Place mixture into muffins holders and bake in a preheated oven for 20 minutes.
