METHOD
STEP 1

Pre heat oven. Place milk, dates, coconut, sunflower seeds and vanilla in a saucepan and bring to the boil on medium heat - mash dates. Remove from heat when the mixture thickens and set aside to cool
STEP 2

Beat the eggs
STEP 3

Add the eggs, oil, flour and salt into the thickened mixture and blend well, but don't over mix!
STEP 4

Place mixture into muffins holders and bake in a preheated oven for 20 minutes.Â
